Blueberry Cake Doughnuts

Donuts! The All American Classic, but now with a twist! These donuts are an all-time favorite of mine. They are very simple and satisfy the Dunkin’ craving I have far too often.

If you don't have a standing mixer, you can use a standard whisk and plain wooden spoon to achieve these little clouds of glory. Just make sure not to overwork the dough. The biggest tip I can provide is to use the small wild blueberries here that are found in most freezer sections in the grocery store. The smaller blueberries will create a more even batter as well as better disperse in your dough. But if all you have is the regular bigger ones, that is ok too. Just make sure they are frozen/defrosted and then smashed to give your dough that purple hue. Fresh blueberries just won't cut it here. I used two Satori products for these: Satori Milk Chocolate Bar and Satori Blueberries in Dark Chocolate.

Makes 18 Doughnuts, 10mg THC each.

Ingredients

Doughnuts:

  • 1 egg
  • ½ cup sugar
  • ½ cup milk
  • ¼ cup of frozen blueberries, defrosted & smashed with a fork
  • 2 tablespoons melted butter, cooled
  • 2 cups all purpose flour (sifted)
  • 2 teaspoons baking powder
  • Zest from half a lemon
  • ¼ teaspoon salt
  • 32oz Canola Oil

Directions

In the bowl of a standing mixer fitted with a whisk attachment add the egg and sugar. Whisk until just combined. Not foamy. While on medium low, slowly add the milk and the melted butter just until combined. Then add the smashed defrosted blueberries and whisk on high for about 10 seconds.

In another medium bowl combine the sifted flour, baking powder, zest and salt. Stir the dry ingredients until evenly combined.

Back to the standing mixer fitted with the paddle attachment now. Slowly run on low speed while adding the dry ingredients to the wet just until combined. Make sure not to overmix to avoid tough doughnuts.

Pour dough out onto plastic wrap. Wrap it up into a disc and place in the refrigerator until cooled. At least 20 minutes.

When ready, unwrap and roll out the dough using a rolling pin (wine bottle or similar works here if you don't have one). Roll out to ½ inch. Making sure your dough is even throughout.

Prepare your oil. Pour into a heavy bottom pot or large saucepan. The wider the better to help you easily reach the doughnuts. Bring to 375F using a thermometer. Another trick is to dunk the handle bottom of a wooden kitchen tool when you think the oil is ready. It will bubble up alot when ready. Prepare a drying rack or plate with paper towels for the fried doughnuts.

Cut your doughnuts using a doughnut cutter OR 2 different size round cutters. Cutting them and adding them to the oil as you go. You can use the leftover doughnut holes and scraps to make extra fried dough for those munchies later on ;)

Fry your doughnuts while allowing for space between them to avoid touching. Fry each side until golden brown until flipping. About 2-3 minutes per side. Once done, drain on a rack or paper towels. Complete all of them first, then any extra bits you have left after that.

Toss any cooled extra fried doughnut holes and scraps into the granulated sugar and enjoy while finishing the recipe or save them for munchies later.

Break up your Satori bars into a small microwave safe bowl. Add coconut oil. Microwave in 20 second increments, stirring in between until melted. Don't cook for too long or you will cook off the THC and break your chocolate.

If your chocolate begins to harden at any point, place back into the microwave 15 seconds at a time until loose again. When done, place somewhere cool out of sunlight or in the fridge to harden the chocolate.

Prepare a sheet pan with parchment paper. Once the chocolate is melted, take one doughnut at a time and dip the entire top into the melted chocolate to cover completely.

Glazing Blueberry Donuts

Place chocolate side up onto the parchment paper and sprinkle. Continue for all puffs ensuring you evenly spread the chocolate amongst 18 Doughnuts. As long as your chocolate is evenly spread out on them, they will be about 10mg THC each. Any chocolate left over. Evenly drizzle over all doughnuts.
Tip: Use a fork to dip and drizzle the remaining chocolate.

Topping blueberry donuts with nuts and cannabis blueberries

Sprinkle the cooling chocolate with one finely chopped Satori Chocolate Blueberry (optional) for each doughnut. Do this first to make sure the entire Satori Blueberry is on one doughnut. Then finish with a heavy pinch of chopped peanuts. Note the blueberry is an added <2mg THC.

Allow to cool until the chocolate is set or put in the refrigerator for 15 minutes to speed it up. Savor them fresh.
